Sweet Potato Salad Recipe
Sweet potato salad is a nutritional food; it is rich in beta carotene, potassium and fiber. Kids like potatoes so they will like it too. It is very easy to make and it is a healthy food also.
Ingredients:
- 1 tablespoon good quality rice or white wine vinegar
- 2 sweet potatoes (about 1 pound), peeled and cut into bite size chunks
- ½ small red onion, chopped fine
- 2 pinches sea salt
- 2 tablespoons chopped fresh basil or dill
- 1 teaspoon mild curry powder (optional)
- 2 ribs of celery, chopped
- 1 pinch cayenne (optional)
- ¼ cup good quality mayonnaise or Vegenaise
Preparation:
- Take a saucepan, put sweet potatoes in it. Add water in the saucepan and bring it to boil.
- Now reduce the heat and cook it for 10 minute, until it tender.
- Now take the potatoes to drain, now cool and peel the potatoes and put it in the mixing bowl.
- Sprinkle it with the vinegar and put it in the room temperature for cooling it.
- Now add onion, celery, herbs, mayo and spices in it and stir gently.
- Now put it in refrigerator. After some time serve it chilled.
